(Should Be) Trending: The Lavender Gin Sour

A favourite ingredient of foodies, it was only a matter of time before lavender would waft its way onto cocktails menus everywhere. The dainty and herbaceous flower is having a moment, and is the perfect subtly sweet chocolate substitute that you can sip on all day and never get sick of.

Enter: The Lavender Gin Sour. A vibrant, violet hued take on the classic gin sour, this light and foamy libation is a crowd pleaser that carries the flowers’ slightly sweet floral notes and hints of rosemary. If you have dietaries in your group, swap egg whites out for Wonderfoam, a vegan friendly cocktail foamer that’ll make sure your lavender smash still has a thick layer of Insta-worthy fluff everytime.

How to make a Lavender Gin Sour

Ingredients (serves 2)

Lavender Simple Syrup
½ cup water
½ cup white sugar
1 Tbs culinary lavender 

Lavender Gin Sour
90mL Ink Gin
30mL freshly squeezed lemon juice
30mL lavender simple syrup
2 egg whites OR 6-12 drops of Wonderfoam
2 Lemon twist
Ice 


Method

To make the Lavender Simple Syrup 

1. Combine the water and lavender in a saucepan and bring to a boil over medium heat. 

2. Once boiling, reduce heat to simmer before adding sugar and stirring until dissolved. Continue to simmer for 15 minutes before setting aside to cool. 

3. Strain the syrup through a fine mesh strainer.


To make the Lavender Gin Sou

1. Add gin, lemon juice, lavender simple syrup and 1 egg white (Or 6-12 drops of Wonderfoam) to a cocktail shaker with no ice and shake for 30s. 

2. Fill your shaker with ice and shake again until nice and cold then strain into your favourite cocktail glass.

3. Garnish with your lemon twist.
